I have a Yamaha 250.....

What should my water pressure be running at Idle, Mid Range RPM's, and High Rpm's?

I have a 250 HPDI and I have this question to my dealer before. At idle my gauge rarely registers anything. At mid range 5-8lbs and at full throttle 12 lbs. I believe he told me you should have at least 10 at full throttle.

I have an '06 250 HPDI. At idle, my gauge shows 2-3 lbs., mid-range of 12-15 lbs. and WOT around 18-20lbs.

I was also having a low water pressure problem,  replaced my impeller which didn't change anything. My problem ended up being the popit valve, pulled it off and it had bunch of little rocks in it. Removed the rocks.... back to normal 2-3 lbs at idle 18-20 wot.

You can also stretch the poppet valve spring about 1"and it will help with pressures. You may not see much water pressure at idle on a Yamaha but as soon as you rev it up a little it will register.

Where is the poppet valve? And is it something easily checked?

Check out the link posted above.  It shows pics of where it is located.

Yes, it is easy to check.
